Veggie Cottage Pie recipes

Veggie cottage pieA taste of some hearty home cooking, this low calorie and vegetarian dish is perfect. Serve this dish with fresh vegetables of your choice, and a little vegetarian gravy, see this healthy culinary article cooking directions and ingredients after this jump.

Veggie Cottage Pie Ingredients:

  • 300g Vegetarian Mince
  • 200g Potatoes, White
  • 30ml Milk, Semi Skimmed
  • 25g Margarine, Light
  • 3 Med/183g Carrots
  • 2 Servings/56g Gravy Granules, Vegetarian, Bisto
  • 2 Tsp/4g Pepper, Black, Ground
  • 1 Med/90g Onions
  • 1 Tbsp/15ml Sunflower Oil
  • 1 Tsp/3g Garlic

Cooking Directions:

  1. Peel potatoes and bring to boil in a pan of water.
  2. Peel and dice carrots and onions into small pieces, heat oil in a pan and sauté gently for a few minutes.
  3. Drain oil from pan and add veggiemince and water (as directed on packet) and place back on heat.
  4. Stir in a little garlic, and a pinch of pepper and let simmer.
  5. Turn on oven to 190°C
  6. When potatoes are nearly cooked for mashing, add 2 Tbsp.
  7. vegetarian gravy granules to mince and stir continuously for a few minutes while it thickens.
  8. Drain potatoes. Add margarine and splash of milk and mash until very smooth and creamy!
  9. Using an oven proof dish, empty mince into bottom and tap dish on side a few tomes to settle mixture.
  10. Very gently, and not in large lumps as they will sink, using a spoon and fork spread your very creamy mash completely over surface.
  11. Put pie into oven.
  12. Your pie shouldn’t need very long… just until your wisps of mash start to brown slightly at the tips.
  13. Serve and enjoy! I find this dish great with a selection of 2-3 steamed vegetables.
